Ingredients
- 8 large eggs
- 8 small corn tortillas
- 1/4 cup whole milk
- 2 tablespoons unsalted butter
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup grated cheddar cheese
- 1/4 cup chopped cilantro (optional)
- 1/2 cup salsa of your choice
- 1/2 avocado, sliced
Instructions
- In a medium bowl, crack all 8 eggs and add the 1/4 cup of milk.
- Whisk the eggs and milk together until well combined. Add salt and pepper to taste.
- Heat a non-stick skillet over medium-low heat and add 2 tablespoons of butter. Let it melt completely.
- Pour the egg mixture into the skillet. Let it sit for a few seconds, then gently stir with a spatula, pushing the eggs from the edges towards the center. Continue until they’re softly set and slightly runny in parts. This should take about 5 minutes.
- Remove the pan from the heat and sprinkle the cheddar cheese over the eggs, allowing it to melt.
- In a separate pan, warm the corn tortillas over medium heat for about 30 seconds per side, or until pliable.
- To assemble the tacos, place a portion of the scrambled eggs in each tortilla. Top with salsa, avocado slices, and chopped cilantro if using.
