Ingredients

  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 pound pork sausage, casing removed
  • 1 can (28 ounces) crushed tomatoes
  • 1 tablespoon tomato paste
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon sugar
  • Salt and pepper to taste
  • 1/4 cup grated Parmesan cheese, plus more for serving
  • Fresh basil leaves, for garnish (optional)

Instructions

  1. Heat the olive oil in a large skillet over medium heat. Add the chopped onion and sauté until it becomes translucent, about 5 minutes.
  2. Add the minced garlic and cook for an additional minute, stirring frequently to prevent burning.
  3. Add the pork sausage to the skillet. Use a wooden spoon to break it up into small pieces as it cooks. Cook until browned and cooked through, about 8-10 minutes.
  4. Stir in the crushed tomatoes, tomato paste, oregano, basil, thyme, and sugar. Bring the mixture to a simmer, then reduce the heat to low.
  5. Cover the skillet and let the ragù simmer gently for about 1 hour, stirring occasionally. Adjust the heat as necessary to maintain a gentle simmer.
  6. Season the ragù with salt and pepper to taste. Stir in the 1/4 cup grated Parmesan cheese just before serving. This adds a rich flavor and helps thicken the sauce slightly.
  7. Serve the Pork Sausage Ragù over cooked pasta of your choice. Top with additional Parmesan cheese and fresh basil leaves, if desired.
