Ingredients

  • 4 (6-ounce) cod fillets
  • 1 teaspoon salt, divided
  • 1/2 teaspoon freshly ground black pepper, divided
  • 2 tablespoons olive oil
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1/2 teaspoon crushed red pepper flakes
  • 1 (28-ounce) can whole peeled tomatoes, crushed by hand
  • 1/2 cup green olives, pitted and sliced
  • 2 tablespoons capers, drained
  • 1/4 cup fresh parsley, chopped
  • 1 tablespoon fresh lemon juice

Instructions

  1. Season the cod fillets with 1/2 teaspoon of salt and 1/4 teaspoon of black pepper on both sides and set them aside.
  2. In a large skillet over medium heat, heat the olive oil. Add the chopped onion and sauté for about 3 minutes, or until they become translucent. Stir frequently to avoid burning.
  3. Add the minced garlic and crushed red pepper flakes to the skillet and sauté for another 30 seconds, or until the garlic is fragrant. Be careful not to let the garlic burn.
  4. Pour in the crushed tomatoes, including their juice. Stir well and bring the mixture to a simmer. Add the remaining 1/2 teaspoon of salt and 1/4 teaspoon of black pepper. Adjust seasoning to taste. Allow the sauce to simmer for about 10 minutes, stirring occasionally. This will let the flavors meld together.
  5. Add the sliced olives and drained capers to the tomato sauce. Stir to combine.
  6. Gently place the seasoned cod fillets into the skillet, nestling them into the tomato sauce. Cover the skillet with a lid and let the fish cook in the sauce for about 8-10 minutes or until the cod is cooked through and flakes easily with a fork. Avoid overcooking to keep the fish tender.
  7. Once the fish is cooked, remove the skillet from the heat. Drizzle the fresh lemon juice over the dish and sprinkle with chopped parsley. This adds a fresh, zesty finish to the dish.
