Ingredients

  • 1 tbsp olive oil
  • 4 boneless, skinless chicken breasts
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 1 tsp paprika
  • 1/2 tsp dried oregano
  • 1/2 cup chicken broth

Instructions

  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Season chicken breasts with salt and black pepper on both sides.
  3. Add the chicken breasts to the skillet and cook for 5-7 minutes on each side until golden brown and cooked through. Internal temperature should reach 165°F. Tip: Use a meat thermometer to ensure the chicken is fully cooked.
  4. Remove the chicken from the skillet and set aside.
  5. In the same skillet, add the sliced red, yellow, and green bell peppers along with the onion slices. Cook for about 5 minutes, stirring occasionally, until the vegetables begin to soften.
  6. Add the minced garlic, paprika, and dried oregano to the vegetables. Stir well to combine and cook for another 2 minutes. Tip: Stir the vegetables frequently to avoid burning the garlic.
