Ingredients

  • 1 lb of thinly sliced beef (such as flank steak)
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1/2 cup crumbled feta cheese
  • 1/2 cup spinach leaves
  • 1/4 cup roasted red peppers, sliced
  • 1 tablespoon balsamic glaze (optional)

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit.
  2. Lay out the beef slices on a clean surface. If the beef is not already thinly sliced, use a meat mallet to gently pound until about 1/4 inch thick.
  3. Lightly drizzle the olive oil over the beef slices and season with salt and pepper.
  4. On each beef slice, place a few spinach leaves, a sprinkle of feta cheese, and a few strips of roasted red pepper in the center.
  5. Carefully roll up each beef slice, enclosing the filling, and secure with toothpicks.
  6. Place the beef roll-ups in a baking dish. Bake in the preheated oven for 25 to 30 minutes, until the beef is cooked through.
