Ingredients
- 1 lb of thinly sliced beef (such as flank steak)
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon ground black pepper
- 1/2 cup crumbled feta cheese
- 1/2 cup spinach leaves
- 1/4 cup roasted red peppers, sliced
- 1 tablespoon balsamic glaze (optional)
Instructions
- Preheat your oven to 375 degrees Fahrenheit.
- Lay out the beef slices on a clean surface. If the beef is not already thinly sliced, use a meat mallet to gently pound until about 1/4 inch thick.
- Lightly drizzle the olive oil over the beef slices and season with salt and pepper.
- On each beef slice, place a few spinach leaves, a sprinkle of feta cheese, and a few strips of roasted red pepper in the center.
- Carefully roll up each beef slice, enclosing the filling, and secure with toothpicks.
- Place the beef roll-ups in a baking dish. Bake in the preheated oven for 25 to 30 minutes, until the beef is cooked through.
- If using, drizzle the balsamic glaze over the beef roll-ups just before serving.
- Remove toothpicks from the beef roll-ups before serving to your guests.
