Ingredients

  • 4 cod fillets (about 6 oz each)
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice (about 1 lemon)
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and freshly ground black pepper to taste
  • 1 lemon, sliced thin for garnish
  • Fresh parsley, chopped for garnish

Instructions

  1. Preheat your oven to 400°F (200°C). This ensures your cod cooks evenly and thoroughly.
  2. Pat the cod fillets dry with paper towels. Season them lightly with salt and pepper on both sides. Drying and seasoning the fish helps lock in moisture and enhances flavor.
  3. In a small bowl, mix together the olive oil, lemon juice, minced garlic, oregano, thyme, salt, and pepper. Stir well to combine.
  4. Place the cod fillets in a baking dish, making sure they are not overlapping. This ensures even cooking.
  5. Pour the olive oil and lemon mixture evenly over the cod. Make sure each fillet is well-coated.
  6. Arrange the lemon slices over the top of the cod fillets. This not only adds flavor but also makes the dish look more appealing.
  7. Bake in the preheated oven for 20-25 minutes, or until the cod is opaque and flakes easily with a fork.
  8. Remove from the oven and let it sit for a couple of minutes. This resting time allows the juices to redistribute within the fillets.
  9. Garnish with freshly chopped parsley before serving. Serve hot with your choice of sides like rice, potatoes, or a fresh salad.
