Ingredients
- 4 cups of milk
- 1/2 cup of masa harina
- 1/2 cup of water
- 1/3 cup of brown sugar
- 1 teaspoon of vanilla extract
- 1/2 teaspoon of ground cinnamon
- Pinch of salt
Instructions
- In a medium mixing bowl, add 1/2 cup of masa harina and 1/2 cup of water. Stir until the masa, a type of corn flour, is fully dissolved. Tip: Ensure there are no lumps for a smooth texture.
- Pour 4 cups of milk into a medium saucepan over medium heat. Add the masa mixture to the milk. Tip: Stir continuously to avoid sticking or clumping.
- Add 1/3 cup of brown sugar, 1 teaspoon of vanilla extract, 1/2 teaspoon of ground cinnamon, and a pinch of salt to the saucepan. Stir well to combine. Note: You can adjust the sugar level according to your taste.
- Cook the mixture over medium heat, stirring consistently. Important: Slow and constant stirring prevents the mixture from burning and keeps it smooth.
- Allow the atole to reach a gentle simmer, reaching around 180°F (82°C). Continue cooking and stirring for about 10 more minutes until the atole thickens to your desired consistency.
- Remove the saucepan from heat and let it cool slightly. Serve the atole hot in mugs. Optional: Sprinkle a bit of cinnamon on top for extra flavor and presentation.
