Ingredients
- 4 large bell peppers, any color
- 1 pound ground beef
- 1 cup cooked rice
- 1 small onion, chopped
- 1 clove garlic, minced
- 1 can (14.5 oz) diced tomatoes, drained
- 1 teaspoon salt
- 1/2 teaspoon ground black pepper
- 1 teaspoon Italian seasoning
- 1 cup shredded mozzarella cheese
- 2 tablespoons olive oil
Instructions
- Preheat your oven to 375°F (190°C).
- Cut the tops off the bell peppers, remove the seeds and membranes. Rinse and set aside. Tip: to help the peppers stand upright in the baking dish, trim a small slice off the bottom.
- In a large skillet over medium heat, add 2 tablespoons of olive oil. Add the chopped onion and minced garlic. Sauté for about 2 minutes until onions are translucent.
- Add the ground beef to the skillet, breaking it apart with a spoon. Cook until browned, about 5-7 minutes. Drain excess fat if necessary.
- Stir in the cooked rice, drained diced tomatoes, salt, pepper, and Italian seasoning into the beef mixture. Cook for another 2 minutes to combine the flavors.
- Remove the skillet from heat and stir in 1/2 cup of shredded mozzarella cheese. Mix until well combined.
- Stuff each bell pepper with the beef and rice mixture. Place the stuffed peppers in a baking dish.
- Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes.
- Remove the foil and sprinkle the remaining 1/2 cup of mozzarella cheese over the tops of the peppers. Return to the oven and bake for another 10-15 minutes, or until the cheese is melted and bubbly. Tip: let the peppers rest for a few minutes before serving to allow the flavors to settle.
- Carefully remove the stuffed peppers from the oven and serve warm. Enjoy your meal!
