Ingredients

  • 2 tablespoons olive oil
  • 2 cloves garlic, sliced
  • 1 pound fresh spinach, rinsed and dried
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon lemon juice (optional, for added brightness)

Instructions

  1. Heat a large skillet over medium heat. Make sure the skillet is wide enough to allow the spinach to sit in an even layer.
  2. Add olive oil to the skillet. Allow it to warm up for about 1 minute.
  3. Add sliced garlic to the oil. Cook for about 1 to 2 minutes until the garlic is fragrant and just starting to turn golden. Be careful not to let it burn.
  4. Add the spinach to the skillet. You may need to do this in batches if the skillet is not large enough to fit all at once. Stir constantly to help the spinach cook evenly.
  5. Cook the spinach for about 2 to 3 minutes until it is wilted. Use tongs or a wooden spoon to toss the spinach gently as it cooks.
  6. Once wilted, season the spinach with salt and pepper. Stir well to combine.
  7. If you desire a bright, fresh note, add lemon juice and stir before serving.
  8. Remove the skillet from the heat and transfer the spinach to a serving dish immediately to prevent overcooking.
