Ingredients

  • 2 tablespoons olive oil
  • 1 tablespoon unsalted butter
  • 1 pound cremini or button mushrooms, cleaned and sliced
  • 2 cloves garlic, minced
  • Salt, to taste
  • Black pepper, to taste
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon lemon juice

Instructions

  1. In a large skillet, heat 2 tablespoons of olive oil and 1 tablespoon of unsalted butter over medium-high heat until the butter is melted and the oil is shimmering.
  2. Add 1 pound of cleaned and sliced mushrooms to the skillet. Stir them around to coat them in the oil-butter mixture.
  3. Cook the mushrooms for about 10 minutes, stirring occasionally, until they are golden brown and have released most of their moisture.
  4. Add 2 cloves of minced garlic to the skillet and sauté for an additional 1-2 minutes until the garlic is fragrant.
  5. Season the mushrooms with salt and black pepper to taste. Stir in 2 tablespoons of chopped fresh parsley and 1 tablespoon of lemon juice. Cook for another 1 minute.
