Ingredients

  • 1 head of Romanesco broccoli (about 1 lb), cut into florets
  • 3 tablespoons olive oil
  • 4 cloves garlic, thinly sliced
  • Salt to taste
  • Black pepper to taste
  • 1 lemon, zested and juiced
  • 2 tablespoons grated Parmesan cheese
  • Optional: 1/4 teaspoon red pepper flakes for heat, fresh parsley for garnish

Instructions

  1. Start by washing the Romanesco broccoli under cool running water. Pat it dry with a kitchen towel.
  2. Carefully cut the Romanesco into florets using a sharp knife. Try to make them as evenly sized as possible for even cooking.
  3. Heat 3 tablespoons of olive oil in a large skillet over medium heat. Add the sliced garlic and sauté for about 2 minutes until fragrant. Be careful not to burn the garlic.
  4. Add the Romanesco florets to the skillet. Stir to coat them in the garlic oil. Season with salt and black pepper to taste.
