- 1 head of Romanesco broccoli (about 1 lb), cut into florets
- 3 tablespoons olive oil
- 4 cloves garlic, thinly sliced
- Salt to taste
- Black pepper to taste
- 1 lemon, zested and juiced
- 2 tablespoons grated Parmesan cheese
- Optional: 1/4 teaspoon red pepper flakes for heat, fresh parsley for garnish
Instructions
- Start by washing the Romanesco broccoli under cool running water. Pat it dry with a kitchen towel.
- Carefully cut the Romanesco into florets using a sharp knife. Try to make them as evenly sized as possible for even cooking.
- Heat 3 tablespoons of olive oil in a large skillet over medium heat. Add the sliced garlic and sauté for about 2 minutes until fragrant. Be careful not to burn the garlic.
- Add the Romanesco florets to the skillet. Stir to coat them in the garlic oil. Season with salt and black pepper to taste.
- Cook for about 8-10 minutes, stirring occasionally. The Romanesco should be tender but still slightly crisp. If you’d like a little heat, add the red pepper flakes at this stage.
