Ingredients
- 1 head of puntarelle, trimmed and thinly sliced
- 6 anchovy fillets, finely chopped
- 1 clove of garlic, minced
- 1/4 cup extra-virgin olive oil
- 2 tablespoons red wine vinegar
- Salt to taste
- Freshly ground black pepper to taste
Instructions
- Start by preparing the puntarelle. Cut the ends off the stalks and separate the inner leaves. Rinse them thoroughly under cold water to remove any dirt.
- Thinly slice the puntarelle lengthwise. For added crispiness, soak in ice-cold water for 30 minutes.
- While the puntarelle soaks, prepare the dressing. In a small bowl, combine 6 finely chopped anchovy fillets and 1 minced garlic clove.
- Add 1/4 cup extra-virgin olive oil and 2 tablespoons red wine vinegar to the anchovy and garlic mixture. Stir well until the ingredients are fully emulsified.
- Add salt and freshly ground black pepper to the dressing according to your taste preference.
- Drain the puntarelle well and gently pat them dry with a kitchen towel. Place the puntarelle in a large mixing bowl.
- Pour the anchovy dressing over the puntarelle. Toss the salad gently with tongs to ensure all the puntarelle is coated.
