Ingredients

  • 4 medium bell peppers (any color)
  • 1 cup white vinegar
  • 1 cup water
  • 3 tablespoons sugar
  • 2 teaspoons salt
  • 1 teaspoon black peppercorns
  • 1 clove garlic, sliced
  • 1 bay leaf

Instructions

  1. Wash the bell peppers thoroughly under running water.
  2. Place the peppers on a cutting board and use a knife to carefully slice off the tops. Remove the seeds and cut the peppers into thin strips.
  3. In a medium saucepan, combine 1 cup of white vinegar, 1 cup of water, 3 tablespoons of sugar, and 2 teaspoons of salt. Stir well.
  4. Add 1 teaspoon of black peppercorns, 1 sliced garlic clove, and 1 bay leaf to the saucepan.
  5. Place the saucepan on the stove over medium heat. Bring the mixture to a boil while stirring occasionally, ensuring the sugar and salt dissolve completely.
  6. Once boiling, reduce the heat and let it simmer for about 5 minutes.
  7. Carefully add the sliced peppers to the saucepan, making sure they are fully submerged in the liquid.
  8. Simmer the peppers in the vinegar mixture for 5 more minutes to allow them to soften slightly.
  9. Turn off the heat and allow the mixture to cool for about 10 minutes.
  10. Transfer the peppers and the liquid into a large jar or container. Seal tightly and refrigerate.
