- 1 pound russet potatoes, peeled and diced
- 1/2 pound Mexican chorizo, casings removed
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 2 tablespoons vegetable oil
- Salt, to taste
- Freshly ground black pepper, to taste
- Chopped fresh cilantro for garnish (optional)
Instructions
- Start by peeling and dicing the potatoes into small cubes. Aim for uniform sizes to ensure even cooking.
- Heat a large skillet over medium heat and add the chorizo. Use a wooden spoon to break it into smaller pieces as it cooks.
- Cook the chorizo for about 5-7 minutes until fully browned and slightly crispy. Remove it from the skillet and set aside, leaving the rendered fat in the skillet for flavor.
- Add the vegetable oil to the skillet with the rendered chorizo fat. Heat over medium heat.
- Add the diced potatoes to the skillet, spreading them out in an even layer. Let them cook for about 15-20 minutes, stirring occasionally, until tender and golden brown on the edges. Aim for a crispy exterior for more flavor and texture.
- While the potatoes are cooking, finely chop the onion and mince the garlic.
