Ingredients

  • 1 pound russet potatoes, peeled and diced
  • 1/2 pound Mexican chorizo, casings removed
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons vegetable oil
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • Chopped fresh cilantro for garnish (optional)

Instructions

  1. Start by peeling and dicing the potatoes into small cubes. Aim for uniform sizes to ensure even cooking.
  2. Heat a large skillet over medium heat and add the chorizo. Use a wooden spoon to break it into smaller pieces as it cooks.
  3. Cook the chorizo for about 5-7 minutes until fully browned and slightly crispy. Remove it from the skillet and set aside, leaving the rendered fat in the skillet for flavor.
  4. Add the vegetable oil to the skillet with the rendered chorizo fat. Heat over medium heat.
  5. Add the diced potatoes to the skillet, spreading them out in an even layer. Let them cook for about 15-20 minutes, stirring occasionally, until tender and golden brown on the edges. Aim for a crispy exterior for more flavor and texture.
  6. While the potatoes are cooking, finely chop the onion and mince the garlic.
  7. Once the potatoes are almost done, add the onion and garlic to the skillet. Stir and cook for another 3-5 minutes until the onion is translucent and fragrant. Be careful not to burn the garlic.
  8. Return the cooked chorizo to the skillet. Stir everything together to combine well and cook for an additional 2-3 minutes so the flavors meld.
