Ingredients

  • 1 cup dried fava beans, soaked overnight
  • 2 tablespoons olive oil, divided
  • 1 garlic clove, minced
  • 3 cups chopped chicory
  • Salt and pepper to taste
  • 1 tablespoon lemon juice
  • 1/4 teaspoon red pepper flakes

Instructions

  1. Drain and rinse the soaked fava beans. In a large pot, cover the beans with water and bring to a boil.
  2. Lower the heat to a simmer and cook the beans uncovered for about 20 minutes, or until tender. Skim off any foam that forms on the surface.
  3. Drain the cooked beans and mash them in a bowl using a fork or potato masher, adding a tablespoon of olive oil, and lemon juice. Season with salt and pepper to taste.
  4. In a large skillet, heat the remaining tablespoon of olive oil over medium heat. Add the minced garlic and cook until fragrant, about 1 minute.
  5. Add the chopped chicory to the skillet and sauté for about 5 minutes or until wilted and tender.
  6. Stir the mashed fava beans into the skillet with the chicory. Sprinkle the red pepper flakes over the top and adjust seasoning if needed.
