- 1 cup dried fava beans, soaked overnight
- 2 tablespoons olive oil, divided
- 1 garlic clove, minced
- 3 cups chopped chicory
- Salt and pepper to taste
- 1 tablespoon lemon juice
- 1/4 teaspoon red pepper flakes
Instructions
- Drain and rinse the soaked fava beans. In a large pot, cover the beans with water and bring to a boil.
- Lower the heat to a simmer and cook the beans uncovered for about 20 minutes, or until tender. Skim off any foam that forms on the surface.
- Drain the cooked beans and mash them in a bowl using a fork or potato masher, adding a tablespoon of olive oil, and lemon juice. Season with salt and pepper to taste.
- In a large skillet, heat the remaining tablespoon of olive oil over medium heat. Add the minced garlic and cook until fragrant, about 1 minute.
- Add the chopped chicory to the skillet and sauté for about 5 minutes or until wilted and tender.
