Ingredients
- 2 medium zucchini
- 1/4 cup olive oil
- 3 tablespoons white wine vinegar
- 1 teaspoon honey
- 1 clove garlic, minced
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 2 tablespoons chopped fresh parsley
Instructions
- Start by washing the zucchini thoroughly under running water. Pat them dry with a clean kitchen towel.
- Using a knife or a mandoline, thinly slice the zucchini into rounds approximately 1/8-inch thick. This thickness ensures they soak up the marinade well.
- In a mixing bowl, combine the olive oil, white wine vinegar, honey, minced garlic, dried oregano, salt, and pepper. Whisk until all ingredients are well blended to form a vinaigrette.
- Add the zucchini slices to the bowl with the vinaigrette. Toss the zucchini gently with your hands or a spoon to ensure each slice is coated with the marinade.
- Cover the bowl with plastic wrap or transfer the contents to a sealable plastic bag. Ensure there’s minimal air inside to allow the zucchini to soak thoroughly.
- Refrigerate the marinated zucchini for at least 1 hour, stirring occasionally if possible. This allows the flavors to meld and the zucchini to soften slightly. For more intense flavor, leave the zucchini marinating for up to 3 hours.
- Just before serving, finely chop the fresh parsley. Sprinkle it over the marinated zucchini and toss gently to distribute.
- Serve the marinated zucchini as a refreshing side dish. It’s great chilled or at room temperature!
