Ingredients

  • 1 pound button mushrooms, cleaned
  • 1/4 cup extra-virgin olive oil
  • 1/4 cup red wine vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. Bring a large saucepan of water to a boil over high heat. Once boiling, add the mushrooms and blanch them for 3 minutes.

    Tip: Ensure the mushrooms are all about the same size. Halve any larger mushrooms so they cook evenly.
  2. Drain the mushrooms and immediately transfer them to a bowl of ice water to stop the cooking process.

    Tip: Ice water helps keep the mushrooms firm and prevents overcooking.
  3. In a mixing bowl, combine olive oil, red wine vinegar, minced garlic, oregano, thyme, salt, black pepper, and red pepper flakes. Whisk until well mixed.
  4. Drain the mushrooms from the ice water and pat them dry with paper towels.
  5. Combine the mushrooms with the marinade in a jar or airtight container. Make sure all mushrooms are well coated with the marinade.
  6. Seal the container and refrigerate for at least 4 hours, or overnight for the best flavor.
  7. Before serving, let the mushrooms come to room temperature for about 15 minutes and sprinkle with fresh parsley for a pop of color and freshness.
