Ingredients
- 1 pound button mushrooms, cleaned
- 1/4 cup extra-virgin olive oil
- 1/4 cup red wine vinegar
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon red pepper flakes
- 1 tablespoon fresh parsley, chopped
Instructions
- Bring a large saucepan of water to a boil over high heat. Once boiling, add the mushrooms and blanch them for 3 minutes.
Tip: Ensure the mushrooms are all about the same size. Halve any larger mushrooms so they cook evenly. - Drain the mushrooms and immediately transfer them to a bowl of ice water to stop the cooking process.
Tip: Ice water helps keep the mushrooms firm and prevents overcooking. - In a mixing bowl, combine olive oil, red wine vinegar, minced garlic, oregano, thyme, salt, black pepper, and red pepper flakes. Whisk until well mixed.
- Drain the mushrooms from the ice water and pat them dry with paper towels.
- Combine the mushrooms with the marinade in a jar or airtight container. Make sure all mushrooms are well coated with the marinade.
- Seal the container and refrigerate for at least 4 hours, or overnight for the best flavor.
