Ingredients
- 2 medium eggplants
- 3 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 tablespoon balsamic vinegar
- Fresh basil leaves for garnish
Instructions
- Preheat your grill to medium-high heat, about 400°F. Make sure the grill grates are clean.
- While the grill is heating, prepare the eggplants. Slice each eggplant into 1/2-inch thick rounds. The thickness ensures the eggplants cook evenly and remain tender while not becoming mushy.
- In a small bowl, mix together the olive oil, salt, black pepper, garlic powder, and balsamic vinegar. This mixture will be used to brush on the eggplant slices.
- Brush both sides of each eggplant slice with the olive oil mixture. Ensure they are well coated to promote even cooking and to infuse them with flavor.
- Place the eggplant slices on the preheated grill. Grill for 4-5 minutes on each side, or until grill marks appear and the eggplant is tender.
- Once cooked, remove the eggplant from the grill and transfer to a serving plate. Garnish with fresh basil leaves for added flavor and presentation.
