Ingredients

  • 4 large russet potatoes (about 2 lbs)
  • 3 tbsp olive oil
  • 1 tsp salt (divided)
  • 1/2 tsp black pepper
  • 4 tbsp unsalted butter
  • 4 garlic cloves (minced)
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp fresh parsley (chopped)
  • 1/4 tsp paprika (optional)

Instructions

  1. Preheat oven to 425°F. Scrub potatoes (leave skins on) and cut into 1/4-inch thick fries. Soak in cold water for 5 minutes to remove excess starch. Pat completely dry with paper towels.
  2. In large bowl, toss dried fries with olive oil, 3/4 tsp salt, pepper, and paprika (if using). Arrange in single layer on parchment-lined baking sheet. Bake 20-25 minutes, flipping halfway, until golden and crisp.
  3. While fries bake: Melt butter in small saucepan over low heat. Add minced garlic and cook 1-2 minutes until fragrant but not browned. Remove from heat.
  4. Transfer hot fries to large bowl. Pour garlic butter over fries and toss to coat. Add Parmesan and parsley, tossing gently until evenly distributed. Taste and add remaining 1/4 tsp salt if needed. Serve immediately.
