Ingredients
- 4 large russet potatoes (about 2 lbs)
- 3 tbsp olive oil
- 1 tsp salt (divided)
- 1/2 tsp black pepper
- 4 tbsp unsalted butter
- 4 garlic cloves (minced)
- 1/2 cup grated Parmesan cheese
- 2 tbsp fresh parsley (chopped)
- 1/4 tsp paprika (optional)
Instructions
- Preheat oven to 425°F. Scrub potatoes (leave skins on) and cut into 1/4-inch thick fries. Soak in cold water for 5 minutes to remove excess starch. Pat completely dry with paper towels.
- In large bowl, toss dried fries with olive oil, 3/4 tsp salt, pepper, and paprika (if using). Arrange in single layer on parchment-lined baking sheet. Bake 20-25 minutes, flipping halfway, until golden and crisp.
- While fries bake: Melt butter in small saucepan over low heat. Add minced garlic and cook 1-2 minutes until fragrant but not browned. Remove from heat.
- Transfer hot fries to large bowl. Pour garlic butter over fries and toss to coat. Add Parmesan and parsley, tossing gently until evenly distributed. Taste and add remaining 1/4 tsp salt if needed. Serve immediately.
