- 24 fresh sage leaves
- 1/2 cup all-purpose flour
- 1/2 teaspoon fine sea salt
- 1/4 teaspoon black pepper
- 1/2 cup club soda (very cold)
- Vegetable oil for frying (about 1 cup, depending on pan size)
- Additional sea salt for seasoning
Instructions
- Step 1: Prepare the sage leaves by rinsing them gently under cold water, then pat them completely dry with a paper towel. Any moisture can cause the oil to splatter, so make sure they are dry.
- Step 2: In a medium bowl, whisk together the flour, fine sea salt, and pepper. Slowly add the cold club soda while whisking, until you achieve a smooth batter. The batter should be the consistency of pancake batter.
- Step 3: Heat the vegetable oil in a small, deep frying pan over medium-high heat until it reaches 350°F (175°C). To test, drop a small amount of batter into the oil; if it sizzles and rises to the top immediately, it’s ready.
- Step 4: Dip each sage leaf into the batter, letting excess drip off, then carefully place into the hot oil. Fry the leaves in batches to avoid overcrowding the pan. Fry for about 30 seconds until crisp and golden.
