Ingredients
- 4 ears of fresh corn, husked and kernels removed
- 2 tablespoons vegetable oil
- 1/4 cup chopped white onion
- 2 cloves garlic, minced
- 1/4 cup mayonnaise
- 1/4 cup crumbled cotija cheese
- 2 tablespoons fresh lime juice
- 1/4 teaspoon ground chili powder
- Salt to taste
- Chopped cilantro for garnish
Instructions
- Heat the vegetable oil in a large skillet over medium heat.
- Add the chopped onion and cook, stirring occasionally, until the onion becomes translucent, about 2 to 3 minutes.
- Add the minced garlic to the skillet and cook for an additional minute, stirring continuously to avoid burning.
- Stir in the corn kernels and cook for about 10 to 12 minutes, stirring frequently, until the corn is tender and slightly charred.
- Remove the skillet from heat and let the corn cool slightly.
- In a large bowl, combine the cooked corn, mayonnaise, lime juice, chili powder, and salt. Mix until the corn is evenly coated. Adjust seasonings to taste.
- Serve the esquites warm in small serving cups. Top each serving with crumbled cotija cheese and garnish with chopped cilantro.
- Tip: If cotija cheese is not available, feta cheese is a good substitute. Also, for added heat, sprinkle a pinch of cayenne pepper on top before serving.
