Ingredients

  • 4 ears of fresh corn, husked and kernels removed
  • 2 tablespoons vegetable oil
  • 1/4 cup chopped white onion
  • 2 cloves garlic, minced
  • 1/4 cup mayonnaise
  • 1/4 cup crumbled cotija cheese
  • 2 tablespoons fresh lime juice
  • 1/4 teaspoon ground chili powder
  • Salt to taste
  • Chopped cilantro for garnish

Instructions

  1. Heat the vegetable oil in a large skillet over medium heat.
  2. Add the chopped onion and cook, stirring occasionally, until the onion becomes translucent, about 2 to 3 minutes.
  3. Add the minced garlic to the skillet and cook for an additional minute, stirring continuously to avoid burning.
  4. Stir in the corn kernels and cook for about 10 to 12 minutes, stirring frequently, until the corn is tender and slightly charred.
  5. Remove the skillet from heat and let the corn cool slightly.
  6. In a large bowl, combine the cooked corn, mayonnaise, lime juice, chili powder, and salt. Mix until the corn is evenly coated. Adjust seasonings to taste.
  7. Serve the esquites warm in small serving cups. Top each serving with crumbled cotija cheese and garnish with chopped cilantro.
  8. Tip: If cotija cheese is not available, feta cheese is a good substitute. Also, for added heat, sprinkle a pinch of cayenne pepper on top before serving.
