  2. Slice the eggplants lengthwise into 1/4-inch thick slices. You should get about 8-10 slices per eggplant. A sharp knife will make this easier.
  3. Brush both sides of each slice with olive oil and sprinkle lightly with salt. This will help enhance the inherent flavor of the eggplant and ensure it roasts beautifully.
  4. Arrange the slices on a baking sheet and roast in the oven for 20-25 minutes until they are tender and lightly browned. Flip them halfway through cooking to ensure even roasting.
