- Preheat your oven to 400°F (200°C). If you have a convection setting, feel free to use it as it helps the eggplant roast more evenly.
- Slice the eggplants lengthwise into 1/4-inch thick slices. You should get about 8-10 slices per eggplant. A sharp knife will make this easier.
- Brush both sides of each slice with olive oil and sprinkle lightly with salt. This will help enhance the inherent flavor of the eggplant and ensure it roasts beautifully.
- Arrange the slices on a baking sheet and roast in the oven for 20-25 minutes until they are tender and lightly browned. Flip them halfway through cooking to ensure even roasting.
