Ingredients

  • 1 lb choy sum
  • 2 tablespoons oyster sauce
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 2 cloves garlic, minced
  • 1 tablespoon vegetable oil
  • 1/4 cup water
  • 1/2 teaspoon sugar
  • Salt to taste

Instructions

  1. Begin by preparing your choy sum: rinse well under cool running water to remove any dirt. Cut off any tough stems and separate into evenly-sized pieces to ensure even cooking.
  2. Bring a large pot of salted water to a boil. Add the choy sum and blanch for about 1-2 minutes or until bright green and just tender. Do not overcook.
  3. Using a slotted spoon, transfer the blanched choy sum to a bowl of ice water to stop the cooking process and retain its color. Drain well and set aside.
  4. In a small mixing bowl, combine oyster sauce, soy sauce, sesame oil, water, and sugar. Stir until the sugar dissolves. This will be the sauce.
  5. Heat a large frying pan or wok over medium heat. Add the vegetable oil and minced garlic, sauté for about 30 seconds until fragrant. Be careful not to burn the garlic.
  6. Add the drained choy sum to the pan and stir-fry for about 1 minute to warm the greens through.
  7. Pour the sauce mixture over the choy sum in the pan. Toss everything together for another minute, making sure the choy sum is evenly coated with the sauce.
