Ingredients
- 1 lb choy sum
- 2 tablespoons oyster sauce
- 1 tablespoon soy sauce
- 1 teaspoon sesame oil
- 2 cloves garlic, minced
- 1 tablespoon vegetable oil
- 1/4 cup water
- 1/2 teaspoon sugar
- Salt to taste

- Begin by preparing your choy sum: rinse well under cool running water to remove any dirt. Cut off any tough stems and separate into evenly-sized pieces to ensure even cooking.
- Bring a large pot of salted water to a boil. Add the choy sum and blanch for about 1-2 minutes or until bright green and just tender. Do not overcook.
- Using a slotted spoon, transfer the blanched choy sum to a bowl of ice water to stop the cooking process and retain its color. Drain well and set aside.
- In a small mixing bowl, combine oyster sauce, soy sauce, sesame oil, water, and sugar. Stir until the sugar dissolves. This will be the sauce.
- Heat a large frying pan or wok over medium heat. Add the vegetable oil and minced garlic, sauté for about 30 seconds until fragrant. Be careful not to burn the garlic.
- Add the drained choy sum to the pan and stir-fry for about 1 minute to warm the greens through.
- Pour the sauce mixture over the choy sum in the pan. Toss everything together for another minute, making sure the choy sum is evenly coated with the sauce.
- Taste and add salt if necessary. For more flavor, add a dash more soy sauce or sesame oil according to your preference.
