Ingredients

  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped onion
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup all-purpose flour
  • 2 tbsp olive oil
  • 1/4 cup water

Instructions

  1. Start by draining and rinsing the chickpeas thoroughly. This removes any excess salt and helps enhance their flavor.
  2. In a food processor, combine chickpeas, parsley, onion, garlic, cumin, salt, and black pepper. Process until you get a chunky paste. It’s fine if there are a few whole chickpea pieces left.
  3. Transfer the chickpea paste to a mixing bowl. Add in the flour and water. Stir the mixture until everything is evenly combined. If it’s too sticky, you can add an extra tablespoon of flour.
  4. Heat the olive oil in a frying pan over medium-high heat. To test if the oil is ready, drop a small piece of the mixture into the oil. If it sizzles immediately, the oil is ready.
  5. Scoop about 2 tablespoons of the chickpea mixture and form into a small patty. Carefully place it into the hot oil. Repeat this step, cooking the patties in batches to avoid overcrowding the pan.
  6. Cook the patties for 3-4 minutes on each side, or until golden brown and crispy. Adjust the heat if necessary to ensure even cooking without burning.
  7. Remove the fritters from the pan and place them on a plate lined with paper towels to drain any excess oil.
  8. Serve the fritters warm with your choice of dip, like a tahini sauce or a yogurt-based dip. Enjoy immediately for the best texture and flavor.
