Ingredients
- 1 can (15 oz) chickpeas, drained and rinsed
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped onion
- 2 cloves garlic, minced
- 1 tsp cumin
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup all-purpose flour
- 2 tbsp olive oil
- 1/4 cup water
Instructions
- Start by draining and rinsing the chickpeas thoroughly. This removes any excess salt and helps enhance their flavor.
- In a food processor, combine chickpeas, parsley, onion, garlic, cumin, salt, and black pepper. Process until you get a chunky paste. It’s fine if there are a few whole chickpea pieces left.
- Transfer the chickpea paste to a mixing bowl. Add in the flour and water. Stir the mixture until everything is evenly combined. If it’s too sticky, you can add an extra tablespoon of flour.
- Heat the olive oil in a frying pan over medium-high heat. To test if the oil is ready, drop a small piece of the mixture into the oil. If it sizzles immediately, the oil is ready.
- Scoop about 2 tablespoons of the chickpea mixture and form into a small patty. Carefully place it into the hot oil. Repeat this step, cooking the patties in batches to avoid overcrowding the pan.
- Cook the patties for 3-4 minutes on each side, or until golden brown and crispy. Adjust the heat if necessary to ensure even cooking without burning.
- Remove the fritters from the pan and place them on a plate lined with paper towels to drain any excess oil.
- Serve the fritters warm with your choice of dip, like a tahini sauce or a yogurt-based dip. Enjoy immediately for the best texture and flavor.
