  • 1/2 cup (120ml) dry white wine
  • 1/2 cup (120ml) tomato puree
  • 1/4 cup (60ml) lemon juice
  • 1 teaspoon (5ml) dried oregano
  • Salt and freshly ground black pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a saucepan, heat the olive oil over medium heat. Add the shallot and garlic, and sauté until softened.
  2. Add the mushrooms to the saucepan and cook for 5 minutes, or until they begin to soften.
