- 1 pound (450g) mushrooms, cleaned and halved
- 2 tablespoons (30ml) olive oil
- 1 shallot, finely chopped
- 2 cloves garlic, minced
- 1/2 cup (120ml) dry white wine
- 1/2 cup (120ml) tomato puree
- 1/4 cup (60ml) lemon juice
- 1 teaspoon (5ml) dried oregano
- Salt and freshly ground black pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- In a saucepan, heat the olive oil over medium heat. Add the shallot and garlic, and sauté until softened.
- Add the mushrooms to the saucepan and cook for 5 minutes, or until they begin to soften.
- Pour in the white wine, tomato puree, lemon juice, and oregano. Stir to combine.
- Simmer for 10-15 minutes, or until the mushrooms are tender and the sauce has thickened.
- Season with salt and pepper to taste. Garnish with chopped parsley before serving.
