Ingredients
- 1 pound assorted mushrooms (such as cremini, shiitake, and button), cleaned and sliced
- 2 tablespoons olive oil
- 1 tablespoon unsalted butter
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1/2 cup vegetable or chicken broth
- 1/4 cup dry white wine
- 1 tablespoon soy sauce
- 1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)
- Salt and freshly ground black pepper, to taste
- 2 tablespoons chopped fresh parsley, for garnish
Instructions
- Heat the olive oil and butter in a large skillet over medium heat until the butter is melted and the mixture starts to bubble gently.
- Add the chopped onions to the skillet and cook, stirring often, until they become translucent, about 4-5 minutes. This will add a sweet flavor and soften the onions.
- Stir in the minced garlic and cook for another 30 seconds until fragrant. Be careful not to burn the garlic.
- Add the sliced mushrooms to the skillet and cook, stirring occasionally, until they start to release their moisture, about 5-7 minutes.
- Pour in the broth, white wine, and soy sauce. Add the thyme, salt, and pepper, and stir everything together.
- Bring the mixture to a simmer. Once simmering, lower the heat to medium-low, cover the skillet, and let the mushrooms cook for 30 minutes, stirring occasionally. If they start to look dry, add a bit more broth.
- Check the seasoning and adjust with additional salt or pepper if necessary. The mushrooms should be tender and the sauce slightly thickened once done.
- Remove from heat and sprinkle the chopped parsley over the top as a fresh garnish.
