Ingredients

  • 2 large zucchinis
  • 1 cup marinara sauce
  • 1 cup grated Parmesan cheese
  • 1 cup panko breadcrumbs
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • 2 tablespoons olive oil

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper to prevent sticking.
  2. Wash the zucchinis and slice them into 1/4-inch thick rounds. You don’t need to peel them.
  3. In a mixing bowl, combine the panko breadcrumbs, salt, black pepper, oregano, and garlic powder.
  4. Dip each zucchini slice in olive oil, ensuring both sides are coated, then press the slices into the breadcrumb mixture to coat both sides.
  5. Place the breaded zucchini slices in a single layer on the prepared baking sheet. Make sure they don’t overlap for even cooking.
  6. Bake the zucchini slices in the preheated oven for 20 minutes, or until they are golden brown and crispy. Flip them halfway through baking for even crispiness.
  7. Remove the baking sheet from the oven and spoon marinara sauce over each zucchini slice.
  8. Sprinkle grated Parmesan cheese generously on top of the marinara sauce-covered zucchini slices.
  9. Return the baking sheet to the oven and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
