Ingredients
- 2 large zucchinis
- 1 cup marinara sauce
- 1 cup grated Parmesan cheese
- 1 cup panko breadcrumbs
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 teaspoon dried oregano
- 1 teaspoon garlic powder
- 2 tablespoons olive oil
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper to prevent sticking.
- Wash the zucchinis and slice them into 1/4-inch thick rounds. You don’t need to peel them.
- In a mixing bowl, combine the panko breadcrumbs, salt, black pepper, oregano, and garlic powder.
- Dip each zucchini slice in olive oil, ensuring both sides are coated, then press the slices into the breadcrumb mixture to coat both sides.
- Place the breaded zucchini slices in a single layer on the prepared baking sheet. Make sure they don’t overlap for even cooking.
- Bake the zucchini slices in the preheated oven for 20 minutes, or until they are golden brown and crispy. Flip them halfway through baking for even crispiness.
- Remove the baking sheet from the oven and spoon marinara sauce over each zucchini slice.
- Sprinkle grated Parmesan cheese generously on top of the marinara sauce-covered zucchini slices.
- Return the baking sheet to the oven and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and let cool for a few minutes before serving. Enjoy your Zucchini Parmesan as a main dish with a side salad or as a delicious appetizer.
