Ingredients
- 400g thick wheat noodles
- 2 tablespoons vegetable oil
- 250g ground pork
- 1 medium onion, finely diced
- 2 cloves garlic, minced
- 2 tablespoons fermented soybean paste
- 2 tablespoons hoisin sauce
- 1 tablespoon soy sauce
- 1 tablespoon rice wine or dry sherry
- 1 teaspoon sugar
- 1 medium cucumber, julienned
- 4 green onions, sliced
- Fresh cilantro for garnish (optional)
Instructions
- Boil water in a large pot and cook the noodles according to package instructions. Drain and set aside. Rinse with cold water to prevent sticking.
- Heat the vegetable oil in a large frying pan or wok over medium-high heat. Add the ground pork and cook, breaking it apart with a wooden spoon, until browned and cooked through, about 5 minutes. Transfer to a plate.
- In the same pan, add the onion and garlic. Sauté until the onion becomes translucent, about 3 minutes. Be careful not to burn the garlic, reducing heat if necessary.
- Return the cooked pork to the pan with the onion and garlic. Add the fermented soybean paste, hoisin sauce, soy sauce, rice wine, and sugar. Stir well to combine all ingredients. Cook for another 5-7 minutes until the sauce is thickened. If the mixture seems dry, add a few tablespoons of water.
- Divide the noodles into serving bowls. Top each with the savory meat sauce.
- Garnish the noodles with julienned cucumber, sliced green onions, and fresh cilantro if using. Serve immediately.
