Ingredients

  • 1 tablespoon vegetable oil
  • 1 block (14 ounces) firm tofu, drained and cubed
  • 1 cup broccoli florets
  • 1 cup sliced carrots
  • 1 cup sliced bell peppers (any color)
  • 1 cup snow peas
  • 1/2 cup sliced water chestnuts, drained
  • 2 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 tablespoon oyster sauce (vegetarian)
  • 1 teaspoon cornstarch mixed with 2 tablespoons water
  • 1/4 cup vegetable broth
  • 1/2 teaspoon grated fresh ginger
  • Salt and pepper to taste

Instructions

  1. Gather all your ingredients and wash the vegetables thoroughly. This will help make the cooking process smoother.
  2. Heat a large non-stick skillet or wok over medium-high heat. Add 1 tablespoon of vegetable oil and let it heat up. You will know it’s ready when the oil starts to shimmer.
  3. Carefully add the cubed tofu to the pan in a single layer. Cook for about 5-7 minutes, turning occasionally, until the tofu is golden brown on all sides. Remove the tofu from the pan and set aside.
  4. In the same pan, add the minced garlic and grated ginger. Stir-fry for about 30 seconds until fragrant, being careful not to burn them.
  5. Add the broccoli, carrots, bell peppers, snow peas, and water chestnuts to the pan. Stir-fry for 3-5 minutes, or until the vegetables are just tender-crisp. Tip: Keep the vegetables moving in the pan to ensure even cooking.
  6. In a small bowl, combine the soy sauce, vegetarian oyster sauce, cornstarch mixture, and vegetable broth. Stir well until everything is mixed.
  7. Return the tofu to the pan with the vegetables. Pour the sauce over the contents of the pan and stir gently to combine. Allow the sauce to simmer and thicken for about 2 minutes. If you prefer more sauce, you can add a little more broth.
  8. Taste and adjust the seasoning with salt and pepper as desired. Remember that soy sauce adds saltiness, so season accordingly.
