Ingredients
- 2 tablespoons olive oil
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 pound veal, cut into cubes
- Salt and pepper to taste
- 1 cup tomato sauce
- 1/2 cup white wine
- 1 cup chicken broth
- 1 bay leaf
- 2 cups fresh or frozen peas
- 1 tablespoon chopped fresh parsley
Instructions
- Heat the olive oil in a large skillet over medium heat. Add the onion and cook until softened, about 5 minutes. Stir occasionally to avoid burning.
- Add the minced garlic to the skillet and cook for an additional 1 minute until fragrant. Be careful not to burn the garlic.
- Increase the heat to medium-high and add the veal cubes to the skillet. Season with salt and pepper. Cook, stirring occasionally, until the veal is browned on all sides, about 5-7 minutes.
- Pour in the white wine and deglaze the pan by scraping any brown bits from the bottom with a wooden spoon. This adds extra flavor to the sauce.
- Stir in the tomato sauce, chicken broth, and add the bay leaf. Bring the mixture to a simmer.
- Cover the skillet, reduce the heat to low, and let the veal simmer gently for about 45 minutes until tender. Stir occasionally, checking if more liquid is needed.
- Add the peas to the skillet and continue to cook for an additional 10 minutes, or until the peas are tender. Remove the bay leaf.
- Garnish with freshly chopped parsley before serving. Serve hot with bread or your choice of side.
- If using frozen peas, there is no need to thaw them before adding to the skillet. Just ensure they are cooked through.
