Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 pound veal, cut into cubes
  • Salt and pepper to taste
  • 1 cup tomato sauce
  • 1/2 cup white wine
  • 1 cup chicken broth
  • 1 bay leaf
  • 2 cups fresh or frozen peas
  • 1 tablespoon chopped fresh parsley

Instructions

  1. Heat the olive oil in a large skillet over medium heat. Add the onion and cook until softened, about 5 minutes. Stir occasionally to avoid burning.
  2. Add the minced garlic to the skillet and cook for an additional 1 minute until fragrant. Be careful not to burn the garlic.
  3. Increase the heat to medium-high and add the veal cubes to the skillet. Season with salt and pepper. Cook, stirring occasionally, until the veal is browned on all sides, about 5-7 minutes.
  4. Pour in the white wine and deglaze the pan by scraping any brown bits from the bottom with a wooden spoon. This adds extra flavor to the sauce.
  5. Stir in the tomato sauce, chicken broth, and add the bay leaf. Bring the mixture to a simmer.
  6. Cover the skillet, reduce the heat to low, and let the veal simmer gently for about 45 minutes until tender. Stir occasionally, checking if more liquid is needed.
  7. Add the peas to the skillet and continue to cook for an additional 10 minutes, or until the peas are tender. Remove the bay leaf.
  8. Garnish with freshly chopped parsley before serving. Serve hot with bread or your choice of side.
  9. If using frozen peas, there is no need to thaw them before adding to the skillet. Just ensure they are cooked through.
