Ingredients

  • 4 veal cutlets, about 1/4 inch thick
  • Salt and pepper to taste
  • 1 cup all-purpose flour
  • 2 large eggs
  • 2 tablespoons milk
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • 1/2 cup olive oil
  • 2 cups prepared marinara sauce
  • 1 1/2 cups shredded mozzarella cheese
  • 2 tablespoons chopped fresh basil or parsley (optional, for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Use a meat tenderizer or mallet to gently pound the veal cutlets to an even thickness. Season both sides with salt and pepper.
  3. Set up a breading station with three separate shallow bowls. In the first bowl, place the flour. In the second bowl, beat the eggs with the milk. In the third bowl, combine the breadcrumbs, grated Parmesan cheese, oregano, and garlic powder.
  4. Dredge each veal cutlet in the flour, making sure to shake off any excess. Then dip it in the egg mixture, allowing the excess to drip off. Finally, coat it with the breadcrumb mixture, pressing gently to ensure it adheres well.
  5. Heat the olive oil in a large frying pan over medium-high heat. Working in batches, fry the breaded veal cutlets for 2-3 minutes on each side, or until golden brown. Transfer them to a paper towel-lined plate to drain any excess oil.
  6. Spread about 1/2 cup of marinara sauce over the bottom of a baking dish. Arrange the fried veal cutlets over the sauce. Pour the remaining marinara sauce evenly over the cutlets, then sprinkle with mozzarella cheese.
  7. Bake in the preheated oven for 20 minutes, or until the cheese is melted and golden brown.
  8. Remove from the oven and let it cool for a few minutes. Garnish with chopped fresh basil or parsley, if desired, before serving.
