Ingredients

  • 1 tablespoon olive oil
  • 1 pound Italian sausage, casings removed
  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1 can (14 ounces) diced tomatoes
  • 2 cans (15 ounces each) cannellini beans, drained and rinsed
  • 1 cup chicken broth
  • Salt and pepper to taste
  • 2 cups fresh spinach leaves
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon chopped fresh parsley

Instructions

  1. Heat the olive oil in a large skillet over medium heat. Add the sausage, breaking it apart with a wooden spoon, and cook until browned, about 5-7 minutes.
  2. Add the diced onion to the skillet. Cook until the onion becomes translucent, about 3-4 minutes. Stir in the minced garlic, and cook for another minute.
  3. Sprinkle oregano and thyme over the mixture, stirring well to combine.
  4. Pour in the diced tomatoes and chicken broth. Stir everything together and bring to a gentle simmer.
  5. Add the cannellini beans to the skillet. Season with salt and pepper to taste, and stir gently so the beans don’t break apart. Simmer for 20 minutes, allowing the flavors to meld.
  6. Add the fresh spinach leaves to the skillet. Stir until the spinach is wilted, about 2-3 minutes.
  7. Sprinkle Parmesan cheese over the top, and stir gently to incorporate. Adjust the seasoning if necessary.
  8. Remove the skillet from the heat. Garnish with fresh parsley before serving. A tip is to serve with crusty bread for dipping.
