Ingredients

  • 4 bolillo rolls or small French baguettes
  • 2 cups cooked, shredded pork
  • 2 cups tomato sauce
  • 4 dried arbol chiles, stemmed
  • 1 clove garlic
  • 1/2 cup chopped white onion
  • 1/2 teaspoon ground cumin
  • 1 teaspoon salt
  • 1/4 cup white vinegar
  • 2 cups water
  • 3 tablespoons vegetable oil

Instructions

  1. Preheat your oven to 375°F (190°C) to warm the rolls later.
  2. Start by making the sauce. Heat a small saucepan over medium heat and add 2 cups of water. Once boiling, add the arbol chiles and let them rehydrate for about 5 minutes. Turn off the heat and let it cool slightly.
  3. In a blender, combine the rehydrated chiles, tomato sauce, garlic, onion, cumin, salt, and vinegar. Blend until smooth. Taste and adjust seasoning if necessary.
  4. In a large skillet, heat the vegetable oil over medium heat. Carefully pour the blended sauce into the skillet. Let it simmer for approximately 15 minutes, stirring occasionally until it thickens slightly.
  5. While the sauce is simmering, place the bolillo rolls in the preheated oven to warm for about 5-7 minutes.
  6. Once warmed, carefully slice each roll lengthwise, without cutting all the way through, to create a pocket for the fillings.
  7. Fill each warm roll with about 1/2 cup of shredded pork.
  8. To serve, place the filled rolls on plates and generously spoon the hot tomato sauce over them, ensuring they are ‘drowned’.
  9. Tip: Serve with additional chiles or lime wedges on the side for added flavor.
