Ingredients
- 4 bolillo rolls or small French baguettes
- 2 cups cooked, shredded pork
- 2 cups tomato sauce
- 4 dried arbol chiles, stemmed
- 1 clove garlic
- 1/2 cup chopped white onion
- 1/2 teaspoon ground cumin
- 1 teaspoon salt
- 1/4 cup white vinegar
- 2 cups water
- 3 tablespoons vegetable oil
Instructions
- Preheat your oven to 375°F (190°C) to warm the rolls later.
- Start by making the sauce. Heat a small saucepan over medium heat and add 2 cups of water. Once boiling, add the arbol chiles and let them rehydrate for about 5 minutes. Turn off the heat and let it cool slightly.
- In a blender, combine the rehydrated chiles, tomato sauce, garlic, onion, cumin, salt, and vinegar. Blend until smooth. Taste and adjust seasoning if necessary.
- In a large skillet, heat the vegetable oil over medium heat. Carefully pour the blended sauce into the skillet. Let it simmer for approximately 15 minutes, stirring occasionally until it thickens slightly.
- While the sauce is simmering, place the bolillo rolls in the preheated oven to warm for about 5-7 minutes.
- Once warmed, carefully slice each roll lengthwise, without cutting all the way through, to create a pocket for the fillings.
- Fill each warm roll with about 1/2 cup of shredded pork.
- To serve, place the filled rolls on plates and generously spoon the hot tomato sauce over them, ensuring they are ‘drowned’.
- Tip: Serve with additional chiles or lime wedges on the side for added flavor.
