Ingredients
- 8 jumbo shrimp, peeled and deveined
- 8 oz lump crab meat
- 2 ripe avocados, diced
- 2 tomatillos, finely diced
- 1/2 cup fresh lime juice
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- 1 hot pepper (such as jalapeño), finely chopped
- 1 tablespoon olive oil
- Pinch of salt
- Pinch of black pepper
- 1 cup tortilla chips, crushed (for serving)
Instructions
- In a medium-sized pot, bring water to a boil. Add the shrimp and cook for about 2-3 minutes until they turn pink and opaque. Immediately transfer to an ice bath to stop cooking. Once cooled, chop into small pieces.
- In a mixing bowl, combine chopped shrimp, crab meat, red onion, cilantro, tomato, and hot pepper. Gently mix to blend all ingredients together evenly.
- In a separate bowl, combine lime juice, olive oil, salt, and black pepper. Whisk together to create the lime dressing.
- Add half of the lime dressing to the seafood mixture and stir gently to coat.
- Cut avocados into bite-sized cubes. Lightly mash half to create a creamy base, leaving other half as chunks.
- To build the tower, place a ring mold on a serving plate. Layer with mashed avocado, then half the seafood mixture, avocado chunks, and the rest of the seafood mixture. Gently lift the mold away to reveal the tower.
- Drizzle remaining lime dressing over the tower. Garnish with additional cilantro and serve with crushed tortilla chips on the side.
