Ingredients

  • 8 oz fresh tagliolini pasta
  • 2 tablespoons unsalted butter
  • 2 tablespoons extra virgin olive oil
  • 1 shallot, finely chopped
  • 1/4 cup Parmesan cheese, freshly grated
  • 1 black truffle, about 10 grams, finely grated
  • Salt to taste
  • Freshly ground black pepper to taste
  • Parsley for garnish (optional)

Instructions

  1. Fill a large pot with water, add a pinch of salt, and bring it to a boil over high heat. This will be used to cook the pasta.
  2. In a large skillet, melt the butter and olive oil over medium heat. Add the finely chopped shallot and cook until translucent, about 3-4 minutes.
  3. Once the water is boiling, add the tagliolini pasta and cook according to package instructions or until al dente, usually 2-3 minutes for fresh pasta.
  4. Reserve about 1/2 cup of the pasta cooking water and then drain the pasta in a colander.
  5. Add the drained pasta to the skillet with the shallot. Toss the pasta gently to coat it in the butter and oil mixture.
  6. Sprinkle in the grated Parmesan cheese and finely grated black truffle. Add a little of the reserved pasta water to create a silky sauce, tossing the pasta to combine everything.
  7. Season the pasta with salt and freshly ground black pepper to taste. Toss again to ensure even distribution of the truffle and seasoning.
  8. Divide the pasta evenly among serving plates. Garnish with additional truffle shavings and parsley if desired.
