Ingredients
- 8 oz fresh tagliolini pasta
- 2 tablespoons unsalted butter
- 2 tablespoons extra virgin olive oil
- 1 shallot, finely chopped
- 1/4 cup Parmesan cheese, freshly grated
- 1 black truffle, about 10 grams, finely grated
- Salt to taste
- Freshly ground black pepper to taste
- Parsley for garnish (optional)
Instructions
- Fill a large pot with water, add a pinch of salt, and bring it to a boil over high heat. This will be used to cook the pasta.
- In a large skillet, melt the butter and olive oil over medium heat. Add the finely chopped shallot and cook until translucent, about 3-4 minutes.
- Once the water is boiling, add the tagliolini pasta and cook according to package instructions or until al dente, usually 2-3 minutes for fresh pasta.
- Reserve about 1/2 cup of the pasta cooking water and then drain the pasta in a colander.
- Add the drained pasta to the skillet with the shallot. Toss the pasta gently to coat it in the butter and oil mixture.
- Sprinkle in the grated Parmesan cheese and finely grated black truffle. Add a little of the reserved pasta water to create a silky sauce, tossing the pasta to combine everything.
- Season the pasta with salt and freshly ground black pepper to taste. Toss again to ensure even distribution of the truffle and seasoning.
- Divide the pasta evenly among serving plates. Garnish with additional truffle shavings and parsley if desired.
