Ingredients
- 2 tablespoons olive oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 carrot, finely chopped
- 1 celery stalk, finely chopped
- 1 pound ground beef
- 1/2 pound ground pork
- 1 cup whole milk
- 1 cup dry white wine
- 1 can (28 ounces) crushed tomatoes
- 2 tablespoons tomato paste
- Salt and freshly ground black pepper to taste
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon sugar
- 1 bay leaf
- 12 ounces tagliatelle pasta
- Freshly grated Parmesan cheese, for serving
Instructions
- Heat the olive oil over medium heat in a large pot or Dutch oven. Add the onion, garlic, carrot, and celery. Cook, stirring occasionally, until the vegetables are softened, about 8-10 minutes.
- Increase the heat to medium-high and add the ground beef and pork. Cook, breaking up the meat with a wooden spoon, until browned, about 10 minutes. Drain off excess fat if necessary.
- Reduce the heat to medium and add the milk to the pot. Stir and simmer gently until the milk has almost evaporated, about 10 minutes.
- Pour in the white wine and cook until reduced by half. This will add depth of flavor to the sauce.
- Stir in the crushed tomatoes, tomato paste, salt, pepper, oregano, basil, sugar, and bay leaf. Bring to a simmer, then reduce the heat to low. Cover and simmer gently for about 1.5 hours, stirring occasionally, until the sauce is thick and flavorful. Tip: If the sauce becomes too thick, add a splash of water or beef broth.
- Just before the sauce is done, bring a large pot of salted water to a boil. Cook the tagliatelle pasta according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta.
- Remove the bay leaf from the sauce. Add the cooked tagliatelle to the Bolognese sauce, tossing gently to combine. If the sauce is too thick, add reserved pasta water a bit at a time until the desired consistency is reached.
