Ingredients

  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 carrot, finely chopped
  • 1 celery stalk, finely chopped
  • 1 pound ground beef
  • 1/2 pound ground pork
  • 1 cup whole milk
  • 1 cup dry white wine
  • 1 can (28 ounces) crushed tomatoes
  • 2 tablespoons tomato paste
  • Salt and freshly ground black pepper to taste
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon sugar
  • 1 bay leaf
  • 12 ounces tagliatelle pasta
  • Freshly grated Parmesan cheese, for serving

Instructions

  1. Heat the olive oil over medium heat in a large pot or Dutch oven. Add the onion, garlic, carrot, and celery. Cook, stirring occasionally, until the vegetables are softened, about 8-10 minutes.
  2. Increase the heat to medium-high and add the ground beef and pork. Cook, breaking up the meat with a wooden spoon, until browned, about 10 minutes. Drain off excess fat if necessary.
  3. Reduce the heat to medium and add the milk to the pot. Stir and simmer gently until the milk has almost evaporated, about 10 minutes.
  4. Pour in the white wine and cook until reduced by half. This will add depth of flavor to the sauce.
  5. Stir in the crushed tomatoes, tomato paste, salt, pepper, oregano, basil, sugar, and bay leaf. Bring to a simmer, then reduce the heat to low. Cover and simmer gently for about 1.5 hours, stirring occasionally, until the sauce is thick and flavorful. Tip: If the sauce becomes too thick, add a splash of water or beef broth.
  6. Just before the sauce is done, bring a large pot of salted water to a boil. Cook the tagliatelle pasta according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta.
  7. Remove the bay leaf from the sauce. Add the cooked tagliatelle to the Bolognese sauce, tossing gently to combine. If the sauce is too thick, add reserved pasta water a bit at a time until the desired consistency is reached.
