Ingredients

  • 8 corn tortillas
  • 200g chicharrón (crispy pork rinds)
  • 1 ripe avocado, sliced
  • 100g panela cheese or queso fresco, sliced
  • 1 cup refried beans
  • 1 cup pico de gallo
  • 1 lime, cut into wedges
  • Salt, to taste
  • 1 tbsp cooking oil

Instructions

  1. Start by heating the refried beans. Place them in a small saucepan over medium heat and stir occasionally. If they become too thick, add a tablespoon of water. Taste and season with salt if necessary.
  2. Warm the tortillas: In a large skillet over medium-high heat, add the cooking oil. Allow it to heat for about a minute. Place one tortilla at a time into the skillet and heat for about 30 seconds on each side until warm and pliable. Stack them on a plate and cover with a clean kitchen towel to keep warm.
  3. Assemble the tacos: Take a warm tortilla and spread a tablespoon of refried beans down the center. Add a few pieces of chicharrón, some slices of avocado, and a couple of slices of panela cheese on top.
  4. Garnish each taco with a spoonful of pico de gallo. Squeeze a lime wedge over the top for added flavor. Fold the tortilla in half and repeat with remaining ingredients.
