Ingredients
- 8 corn tortillas
- 200g chicharrón (crispy pork rinds)
- 1 ripe avocado, sliced
- 100g panela cheese or queso fresco, sliced
- 1 cup refried beans
- 1 cup pico de gallo
- 1 lime, cut into wedges
- Salt, to taste
- 1 tbsp cooking oil
Instructions
- Start by heating the refried beans. Place them in a small saucepan over medium heat and stir occasionally. If they become too thick, add a tablespoon of water. Taste and season with salt if necessary.
- Warm the tortillas: In a large skillet over medium-high heat, add the cooking oil. Allow it to heat for about a minute. Place one tortilla at a time into the skillet and heat for about 30 seconds on each side until warm and pliable. Stack them on a plate and cover with a clean kitchen towel to keep warm.
- Assemble the tacos: Take a warm tortilla and spread a tablespoon of refried beans down the center. Add a few pieces of chicharrón, some slices of avocado, and a couple of slices of panela cheese on top.
- Garnish each taco with a spoonful of pico de gallo. Squeeze a lime wedge over the top for added flavor. Fold the tortilla in half and repeat with remaining ingredients.
- Serve immediately: Tacos Placeros are best enjoyed fresh and warm. Consider serving with extra lime wedges on the side.
