Ingredients
- 1 pound shrimp, peeled and deveined
- 8 corn tortillas
- 2 tablespoons vegetable oil
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 large poblano pepper, roasted, peeled, and sliced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup shredded mozzarella cheese
- 1 cup shredded Monterey Jack cheese
- 1 tablespoon butter
- 1 lime, cut into wedges
- Fresh cilantro, chopped (optional)
Instructions
- Rinse the shrimp under cold water and pat dry with paper towels. Season with salt and black pepper and set aside.
- In a large skillet, heat the vegetable oil over medium heat. Add the chopped onion and cook until soft and translucent, about 5 minutes. Add the minced garlic and cook for an additional 1 minute.
- Add the shrimp to the skillet with the onion and garlic. Cook until shrimp turn pink and opaque, around 3-4 minutes. Stir in the roasted poblano pepper slices and cook for another 1-2 minutes.
- Transfer the shrimp, onion, and pepper mixture to a bowl. In the same skillet, melt the butter over medium-low heat. Add shredded mozzarella and Monterey Jack cheeses to the skillet and stir until melted and combined.
- Spread a spoonful of the melted cheese onto each tortilla. Top with the shrimp mixture. Fold each tortilla in half to create the taco shape.
- Heat a non-stick skillet over medium heat. Place the tacos carefully onto the skillet and cook each side for about 2-3 minutes, or until the tortillas are slightly crispy and the cheese is bubbly. Use a spatula to gently press the tacos as they cook.
