Ingredients

  • 1 lb boneless, skinless chicken breast
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • 8 corn tortillas
  • 1 cup vegetable oil
  • 1/2 cup shredded lettuce
  • 1/2 cup chopped tomatoes
  • 1/4 cup finely chopped onion
  • 1/4 cup crumbled queso fresco
  • 1/4 cup sour cream
  • 1/4 cup salsa

Instructions

  1. Boil the chicken: Place the chicken breasts in a pot and cover them with water. Add a pinch of salt and bring to a boil over medium-high heat. Reduce to a simmer and cook for 15 minutes or until the chicken is fully cooked.
  2. Shred the chicken: Once cooked, remove the chicken from the pot and allow it to cool slightly. Shred the chicken using two forks.
  3. Season the chicken: In a bowl, mix the shredded chicken with salt, pepper, garlic powder, and cumin until well-blended.
  4. Warm the tortillas: Heat a non-stick skillet over medium heat. Warm each tortilla for about 10 seconds on each side to make them pliable.
  5. Assemble the tacos: Spoon a portion of the chicken mixture onto each tortilla and roll it tightly. Secure with toothpicks to hold their shape.
  6. Fry the tacos: In a large skillet, heat vegetable oil to 375°F (190°C). Carefully place the rolled tacos seam-side down in the oil and fry for about 2-3 minutes per side until golden brown.
  7. Drain excess oil: Remove the tacos from the skillet and drain on a plate lined with paper towels.
  8. Garnish and serve: Remove the toothpicks. Top the tacos with lettuce, tomatoes, onions, queso fresco, sour cream, and salsa. Serve immediately.
