Ingredients
- 1 lb boneless, skinless chicken breast
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon cumin
- 8 corn tortillas
- 1 cup vegetable oil
- 1/2 cup shredded lettuce
- 1/2 cup chopped tomatoes
- 1/4 cup finely chopped onion
- 1/4 cup crumbled queso fresco
- 1/4 cup sour cream
- 1/4 cup salsa
Instructions
- Boil the chicken: Place the chicken breasts in a pot and cover them with water. Add a pinch of salt and bring to a boil over medium-high heat. Reduce to a simmer and cook for 15 minutes or until the chicken is fully cooked.
- Shred the chicken: Once cooked, remove the chicken from the pot and allow it to cool slightly. Shred the chicken using two forks.
- Season the chicken: In a bowl, mix the shredded chicken with salt, pepper, garlic powder, and cumin until well-blended.
- Warm the tortillas: Heat a non-stick skillet over medium heat. Warm each tortilla for about 10 seconds on each side to make them pliable.
- Assemble the tacos: Spoon a portion of the chicken mixture onto each tortilla and roll it tightly. Secure with toothpicks to hold their shape.
- Fry the tacos: In a large skillet, heat vegetable oil to 375°F (190°C). Carefully place the rolled tacos seam-side down in the oil and fry for about 2-3 minutes per side until golden brown.
- Drain excess oil: Remove the tacos from the skillet and drain on a plate lined with paper towels.
- Garnish and serve: Remove the toothpicks. Top the tacos with lettuce, tomatoes, onions, queso fresco, sour cream, and salsa. Serve immediately.
