Ingredients
- 2 pounds beef suadero or brisket
- 1/4 cup vegetable oil
- 1 tablespoon salt
- 1 teaspoon black pepper
- 4 cloves garlic, minced
- 1 large onion, halved
- 2 bay leaves
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- 6 cups water
- 16 corn tortillas
- 1 cup chopped fresh cilantro
- 1 cup finely chopped white onion
- Lime wedges, for serving
Instructions
- Start by preparing the beef suadero. Trim any large pieces of fat from the meat, but leave some fat for flavor. Cut the beef into pieces about 3 inches apart to help it cook evenly.
- In a large pot or Dutch oven, heat the vegetable oil over medium-high heat. Once hot, add the beef pieces and sear them on all sides until browned. This should take about 8-10 minutes.
- Remove the beef from the pot and set aside. In the same pot, add minced garlic, onion halves, bay leaves, cumin, and oregano. Stir for about 2 minutes until the spices are fragrant.
- Return the beef to the pot and pour in the water. Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let it simmer for about 1 1/2 to 2 hours, or until the beef is incredibly tender and easy to shred.
- Remove the pot from heat. Take out the beef pieces and shred the meat using two forks. Discard any excess fat, onions, and bay leaves from the liquid.
- To heat the tortillas, wrap them in a clean kitchen towel and microwave on high for about 30 seconds to 1 minute until warm and pliable. Alternatively, you can heat them one by one in a dry skillet over medium heat for about 15 seconds per side.
- Assemble the tacos by spooning some shredded beef onto each tortilla, then top with chopped cilantro and onion.
