Ingredients

  • 2 pounds beef suadero or brisket
  • 1/4 cup vegetable oil
  • 1 tablespoon salt
  • 1 teaspoon black pepper
  • 4 cloves garlic, minced
  • 1 large onion, halved
  • 2 bay leaves
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 6 cups water
  • 16 corn tortillas
  • 1 cup chopped fresh cilantro
  • 1 cup finely chopped white onion
  • Lime wedges, for serving

Instructions

  1. Start by preparing the beef suadero. Trim any large pieces of fat from the meat, but leave some fat for flavor. Cut the beef into pieces about 3 inches apart to help it cook evenly.
  2. In a large pot or Dutch oven, heat the vegetable oil over medium-high heat. Once hot, add the beef pieces and sear them on all sides until browned. This should take about 8-10 minutes.
  3. Remove the beef from the pot and set aside. In the same pot, add minced garlic, onion halves, bay leaves, cumin, and oregano. Stir for about 2 minutes until the spices are fragrant.
  4. Return the beef to the pot and pour in the water. Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let it simmer for about 1 1/2 to 2 hours, or until the beef is incredibly tender and easy to shred.
  5. Remove the pot from heat. Take out the beef pieces and shred the meat using two forks. Discard any excess fat, onions, and bay leaves from the liquid.
  6. To heat the tortillas, wrap them in a clean kitchen towel and microwave on high for about 30 seconds to 1 minute until warm and pliable. Alternatively, you can heat them one by one in a dry skillet over medium heat for about 15 seconds per side.
  7. Assemble the tacos by spooning some shredded beef onto each tortilla, then top with chopped cilantro and onion.
  8. Serve the tacos with lime wedges on the side for squeezing over the top. Enjoy your Tacos de Suadero!
