Ingredients

  • 1 beef tongue (about 2-3 lbs)
  • 1 large onion, quartered
  • 5 cloves garlic, peeled
  • 2 bay leaves
  • 1 tablespoon black peppercorns
  • 2 teaspoons salt
  • Water, enough to cover the tongue
  • 12 corn tortillas
  • 1/2 cup chopped fresh cilantro
  • 1/2 cup finely diced white onion
  • 2 limes, cut into wedges
  • Salsa of your choice

Instructions

  1. 1. Rinse the beef tongue under cold water and pat dry with paper towels. This helps remove any surface impurities.
  2. 2. Place the tongue in a large stock pot. Add the quartered onion, garlic cloves, bay leaves, black peppercorns, and salt. Fill the pot with enough water to completely cover the tongue. Tip: Use a pot that will allow the tongue to be fully submerged for even cooking.
  3. 3. Bring the pot to a boil over high heat. Once boiling, reduce the heat to low and cover the pot. Simmer for about 4 hours or until the tongue is very tender and can be easily pierced with a fork. Tip: Check occasionally and add more water if needed to ensure the tongue stays covered.
  4. 4. Once cooked, remove the tongue from the pot using tongs and let it cool slightly on a cutting board. When cool enough to handle, peel off the thick outer layer. It should come off easily.
  5. 5. Trim any tough muscle or fat from the base of the tongue, then slice the tongue into thin strips or dice it into small pieces, depending on preference.
  6. 6. Warm the corn tortillas in a dry skillet over medium heat, or wrap them in a towel and microwave for about 30 seconds until pliable.
  7. 7. Assemble the tacos by placing a generous amount of the tongue meat on each tortilla. Top with chopped cilantro, diced onion, a squeeze of lime juice, and your favorite salsa.
