  • 8 ounces chorizo sausage, casing removed
  • 8 small corn tortillas
  • 1/2 cup chopped onion
  • 1/2 cup chopped fresh cilantro
  • 1/2 cup crumbled queso fresco or feta cheese
  • 1 lime, cut into wedges

Instructions

  1. Heat a large skillet over medium-high heat. Once hot, add the chorizo, breaking it apart with a spatula as it cooks. Cook until browned and crispy, about 8-10 minutes. Remove from heat and set aside.
