Ingredients
- 8 ounces chorizo sausage, casing removed
- 8 small corn tortillas
- 1/2 cup chopped onion
- 1/2 cup chopped fresh cilantro
- 1/2 cup crumbled queso fresco or feta cheese
- 1 lime, cut into wedges
- Salt, to taste

- Heat a large skillet over medium-high heat. Once hot, add the chorizo, breaking it apart with a spatula as it cooks. Cook until browned and crispy, about 8-10 minutes. Remove from heat and set aside.
- While the chorizo is cooking, warm the corn tortillas. You can do this by heating them one by one on a skillet over medium heat for about 30 seconds on each side, or by wrapping them in a damp paper towel and microwaving for about 30 seconds. Keep them wrapped in a clean kitchen towel to retain warmth.
