Ingredients

  • 1 tablespoon vegetable oil
  • 1 pound chicken breast, diced
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 2 tomatoes, diced
  • 1 tablespoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon chili powder
  • 1 cup chicken broth
  • 8 corn tortillas
  • 1/4 cup chopped fresh cilantro
  • 1 lime, cut into wedges

Instructions

  1. Heat 1 tablespoon of vegetable oil in a large pot over medium-high heat.
  2. Add 1 pound diced chicken breast to the pot and cook until lightly browned but not cooked through, about 5 minutes.
  3. Stir in 1 finely chopped onion and 2 minced garlic cloves. Cook until the onion is translucent, around 3-4 minutes.
  4. Add 1 chopped green bell pepper and 1 chopped red bell pepper to the pot. Cook for another 3 minutes, stirring occasionally.
  5. Mix in 2 diced tomatoes, 1 tablespoon ground cumin, 1 teaspoon paprika, 1 teaspoon salt, 1/2 teaspoon black pepper, and 1/4 teaspoon chili powder.
  6. Pour in 1 cup chicken broth. Stir well and bring the mixture to a simmer. Reduce the heat to low and cover the pot. Let it cook for 20 minutes, stirring occasionally.
  7. Heat a frying pan over medium heat. Warm the 8 corn tortillas by placing them in the pan for about 30 seconds per side. Keep them warm under a towel.
  8. To serve, place a generous spoonful of the chicken mixture onto each tortilla, sprinkle with chopped fresh cilantro, and squeeze a lime wedge over the top for added flavor.
